Busy bottling

We've been busy bottling some new wines. After all the work in the Fall to crush, press and ferment the grapes, all the patience pays off. It is an exhausting but exhilarating process that starts with determining when the wine is ready and sourcing empty bottles (a challenge these days). 

The fun begins early with setting up the filters. This is a slow process, since we are sterile filtering and the wine is fragile and easily disturbed.  Once the wine is in the bottler the fun begins. We fill 4 bottles at a time, next comes the cork and finally the label is applied before they are packed in boxes.  All this movement dislodges flavor molecules in the wine and it takes a bit of time for them to reassemble. 

Each time we go through this process, we remember how much we love what we do. There is science and art and a fair amount of physical labor involved in the process. In the end we get to sit back, relax and enjoy the fruits of our labor.  We hope you enjoy them too!
